Charpente cider apple. Bitter and tannic. Harvested early to mid-October.

Makes a mild, delicate and fragrant single-varietal cider.

A vigorous tree with a spreading dome shape, the Chevalier Jaune apple tree is better suited to a high-standard goblet shape.

Its hardiness is satisfactory despite its susceptibility to canker. Therefore, care must be taken to plant it in a well-ventilated location.

It produces medium-sized, round, greenish-yellow to light-colored fruit, prized for its good keeping qualities. It offers consistent yields and is not prone to biennial bearing.

This traditional variety from Côtes d'Armor and the North of Ille-et-Vilaine produces a delicate, fragrant cider.
The must of this variety is low in nitrogenous matter.

Defecation typically removes nearly 50% of the nitrogenous matter, so the Nitrogen/Total Sugars ratio is very low. As a result, the cider stabilizes naturally before the sugars fully ferment.

A variety particularly suited to the production of ciders that retain their natural sweetness.

Apple blends (or apple mixes) used to make cider are generally composed of all or part of apples with the desired technical properties, namely sweetness (sugar), bitterness, and acidity. Some apples, on their own, produce what is called a "single-varietal" cider. Apples are thus classified into the following categories:
